Chicken Pot Pie





Pie Crust:::
2/3 c. butter, cold
1 c. whole wheat flour
1 c. AP flour
1/2 tbsp. parsley
dash of salt
1/2 c. water, cold
1 egg, whisked (Used as egg wash on top of crust)
-In a food processor, combine butter, flour, salt & parsley pulse until crumbly.
-Pour butter mixture into a medium bowl & add water. Cut w/ a pastry cutter or fork until it comes together in a ball. (May need to add more water)
-Separate into 2 equal portions.
-Wrap in scran wrap & put in refrigerator while making filling.

Filling:::
2 Chicken Breast, bone in & skin on. boiled- reserve broth- shred
2 tbsp. butter
1 1/2 c. celery, chopped
1 1/2 c. carrots, chopped
1 onion, diced
2 tbsp. flour
1 1/2 c. chicken broth
1 c. dry white wine like Chardonnay
1 c. Milk + 2 tbsp. flour whisked in
1/8 tsp. sage
1/8 tsp. thyme
1 tsp. parsley
salt & pepper
1/2 c. peas
1 c. mushrooms
-Preheat oven to 425
-In a large pan melt butter over medium heat. Add celery, carrots and onions. Saute about 7 minutes.
-Add 2 tbsp. flour and cook 3-5 minutes.
-Add chicken broth and let come to a simmer & thicken.
-Add wine and let come to a simmer.
-Whisk in milk  & seasonings. Bring to a simmer and let simmer and then add shredded chicekn & peas. Simmer for about 5 minutes.
-Add mushrooms and turn off heat.

-Roll out 1 portion of pie crust to fit into a deep baking dish. (I use anything smaller than a 9x13)
-Prick it a few times with a fork and bake for 10 minutes. Meanwhile, roll out second portion of crust.
-Add filling
-Add top crust & pinch or tuck under bottom crust
-Brush with egg wash and sprinkle with additional salt
-Bake at 425 for 10 minutes or until crust has some golden brown to it.
-Reduce heat to 400 and bake for another 10-15 minutes.

Happy Homemaker Monday

Getting the stomach flu as a mom should not be allowed. Ick, Tuesday evening I got horribly sick & Wednesday Ken had to come home from work, sick! It seems to have skipped the girls. PTL, that was my prayer! I am hardly eating, feeling overwhelmed by our vacation coming so quickly & just behind on everything! But I know that the warm Florida sunshine will heal me.

The weather::: Cold for Spring- Low 30s all week!

On my reading pile::: Hoping to get some reading done in FL. Not sure what books I'm taking though

On my TV::: Nothing bc Mae is still sleeping

On the menu for this week:::
Monday - Leftover Lamb Shepard's pie from Sunday
Tuesday - Tortellini & garlic bread

On my to do list::: Oh boy, it's long! I keep telling myself "One thing at a time, One thing at a time..."

My "project" of the week Month:::

What I am cooking::: Rhubarb orange bread

Looking around the house::: House is tidy aside from the piles of laundry that I am working through to pack or put away. Both girls are still sleeping (at 8?!?!? WOW)

Highlight of the past weekend::: MaeMae & Ken. Since the baby has arrived Mae has really taken to her daddy. This weekend she was very into him and it was just cute!

Looking forward to this week::: Our family vacation to the Florida Keys!

St. Patrick's Day Fun

We had some St. Patrick's Day fun here yesterday. Even though it isn't necessarily my favorite  holiday I wanted to make a fun day for Mae. (I had fun too:))


She helped me make green pancakes-Something I remember my mom doing!


She thought green pancakes were sooo fun! And she ate 2.5!!


Ev had a good St. Patty's Day too! (I just realized I didn't get a picture of Mae in her outfit. ooops)


We made rainbow cupcakes! It was kind of tedious but worth the excitement in Mae. As I filled the cupcake liners she told me what color to use next, licked the spoons & then asked for this picture to be taken :)  




My plan was to do a cake from scratch (which is what I always do bc I do not really like that distinct taste a box cake has) but then I saw this at Walmart & I knew I would be trying to pack Sunday so we gave it a try. It was great! It really doesn't taste like a box mix! And since these cupcakes were just for fun for Mae this mix worked perfect. Try one!


Cute huh? But next time I think I would just do it as a cake. B/c like I said splitting the batter up to color it and then 12 times for each cupcake was a little tedious!
 
We finished the day of the Irish w/ Shepard's pie. Mae loves this dinner so it worked perfectly!

The weather::: Spring is near~ We've got highs from 36-50. No Rain *Fingers Crossed*

On my reading pile::: Let it Go by Karen Ehman....Uh, but I haven't opened a book in over 2 weeks. a new baby can really throw off your routine.

On my TV::: Nothing

On the menu for this week:::
Monday - Dinner w/ our small group
Tuesday - Chicken pot pie- Ken's all time favorite
Wednesday - Leftovers
Thursday - I'll be gone so Ken will have to fend for himself
Friday - Mexican Lasagna
Saturday - Pot Roast (It got skipped this past week)
Sunday - Leftovers

On my to do list:::
  • Pay bills
  • Grocery store
  • Laundry
  • Pull out MM's summer clothes from last year to make sure they fit for FL
My "project" of the week Month::: Still working on Evie's room. Slowly adding touches. Ken put up a closet organizer in her room. It works great for the small space.

What I am cooking::: Hopefully Rainbow cupcakes w/ MaeMae to celebrate St. Patrick's day

Looking around the house::: It's dark & quite. Girls are still sleeping so I am in my bed w/ the laptop.

Highlight of the past weekend::: Church service on Sunday. We are learning about the Holy Spirit. A lot of good information! 

Looking forward to this week::: Hearing great news about my friend's little boy...

Pinterest Project- St. Patrick's Day clovers


We attempted 2 more crafts thanks to Pinterest & especially this site. But I didn't think either turned out that great. But I wanted to share b/c older kids could easily do these. The first is suppose to be a 4 leave clover for St. Patrick's Day. To be honest it probably is a good craft & I just didn't conduct it well. Cora had a good time b/c after 3 attempts to get a good looking clover I just turned her loose w/ the paint :)









The second craft is also a clover. The end result was cute but really I was the one who did the whole craft. Cora was too young to really cut, shape & staple it. But she did like running around w/ them after & passing them out to her babies.




 

Happy St. Patrick's Day! Next week I plan on making a few different recipes from the above link to celebrate the day of GREEN!

30 by 30

My friend over at Grass Green Design compiled a list of things she wanted to accomplish before she turned 30. I loved the idea so I decided to do one too! {I turn 30 on February 4, 2014}
I have been thinking of all these things in my head for sometime now. This post gets all my thoughts & ideas down on paper! Hopefully, since I am sharing my list w/ you, I'll feel more accountable to attain it!  My list consists of things that need to be done throughout the whole year some quick & easy others will take more time.
I am looking forward to being more intentional in 2013 with my actions. Read along with me as I mark items off my list!



In no particular order:::

Blog Related:::
1. Host a blog give away
2. Host a guest post
3. Keep up on blog series I have started (Happy Homemaker Monday, 2 on 2 & Pinterest Projects)

Home Related:::
4. Organize & de-clutter every room in the house month by month (Ex: February= Evie's room, March= Cora's room, April= Our bedroom etc.)
5. Make several different household products (hand soap, dryer sheets, different cleaners)
6. Cook something for my freezer at least once a week
7. Have a garage sale
8. Add 'curb appeal' to our home (shrubs,grass, flowers, stone work etc.)
9. Plant something I've never planted in my garden
10. Hang an outside clothes line


Family Related:::
11. Go on a few dates w/ Kenny
12. Plan a Shipshewana, IN trip.
13. Plan something special for Ken's 30th birthday (September)
14. Document the year through pictures/Be more intentional w/ new camera
15. Take girls to the zoo
16. Teach Cora the the letters of the alphabet
17. Open saving accounts for girls
18. Get back on track using coupons, price matching, staying w/i our weekly grocery budget etc.
19. Go on a family vacation

For Me:::
20. Lose baby weight (I'll do this slowly b/c I'm nursing. I will not start a crazy diet plan. My plan is simple: eat healthy, walk & give it time!)
21. Treat myself to a manicure OR pedicure
22. Do something totally different with my hair
23. Do something special for my 30th birthday
24. Create & implement a daily cleaning schedule (I have seen tons of these online but none work for me. I need a personalized one)
25. Start journaling my bible reading time

For Others:::
26. Do something neighborly for at least 2 of my neighbors
27. Get more involved in our Preschool program at church
28. Teach at least 1 friend how to pressure and/or water bath can (Who wants this to be them?!?!)
29. Be a bell ringer for Salvation Army during the Christmas season (I wanted to do this this past Christmas but thought of it too late & couldn't get it scheduled) 
30. Act out at least 3 random acts of kindness (No plan for this- I will wait for the Holy Spirit to guide me)

My "project" of the week Month::: February= Evie's room. It is almost finished. I was planning on starting Cora's room for March. But decided I have A LOT going on and it won't get the attention it needs. So I will spend March finishing Evie's room & move on to Cora's for the month of April!

What I am cooking::: Homemade Yogurt with goat's milk from my in laws! 

Looking around the house::: Luggage in each room to unpack- Mae watching Lion King- Evie is in my lap

Highlight of the past weekend::: Traveling to IN for a whirlwind weekend

Looking forward to this week::: Hair appointment on Wednesday! I'm chopping it all off...

2 on 2~March

Here is my first offical 2 on 2 post= An update on my 2 kids on the 2nd of the month! Yay!

Miss Cora Mae is almost 3 (end of March). She is aware her birthday is coming up & is asking for princess things! So girly :) She is also very excited for our Florida trip. Even though she has never been she knows she wants to go! Ha! She can now recognize her name & knows those 4 letters and we are continuing with the others! She absolutely loves her baby sister & is a bigger help to me than I imagined.

Evelyn is 6 weeks old!! (Wow, that's hard for me to believe) She now smiles, usually at Cora and has out grown her newborn clothes. I'm not sure what she weighs b/c our next doctor visit isn't until mid March. She is sleeping better but every evening she gets crabby & cries for a few hours before finally giving up & falling asleep. Then she gives me a good 4-5 hour sleep before waking to eat. The rest of the night she goes back to eating every 2 hours. One of her favorite past times is creating diaper blow outs for me to clean up :)

I feel so blessed that my maker has trusted me with such treasures.
