Lemonade for a CURE!

UPDATE: The girls actually held the Lemonade stand for a few hours the following day and made another $31! So the grand total for selling lemonade and cookies was $95.09!!! We also had 4 family members match the girls' earnings up to $50! The girls were able to give $295!!! Isn't that amazing? Thanks so much to all who helped a great cause!

On Wednesday my 3 favorite girls held a  PINK lemonade stand to raise money for a cure for breast cancer. They sold PINK lemonade for a whooping .25 cents and inside out cookies for .50 cents a piece. For days they've been working on their signs, baking cookies and planning everything down to the last detail. I posted on facebook for quick prayers. I was worried only a few people would come. God answered your prayers-

They raised an astonishing $64.09 two family members are matching their earns up to $50 so in total $164.09 was raised with 100 % going towards a cure! I was so proud of how friendly, well manured and aggressive (with their sales skills only) they were. It was HOT, high 90's with a heat index of over 100! Every so often one would run in the sprinkler or go cool off in the AC for 5 minutes. They endured the heat from 11- 5:30! I thought they'd be out there for like 2 hours. Ha, not these girls- they were on a mission to help find a cure. It was a fun day with a great lesson.

Sweet N Sour Pork Chops Wins!

Here's a great meal from the crock pot. It was nice to use my c.p. on Monday---It was like 98 degrees out! PHEWWWW
















Sweet N Sour Pork chops- Makes 6 servings
6 pork chops (I used thin ones bc they were on sale)
S & P
1 can pineapple in its own juice, undrained
1/3 c. vinegar
2 Tbsp soy sauce, low sodium
3 Tbsp corn starch
1 tsp. parsley
1 green bell pepper, chopped
1 can water chestnuts
1/2 c. green onions, chopped
2 c. cooked brown rice

1. Place pork chops in the bottom of crock pot and season with salt and pepper.
2. In a small mixing bowl combine: pineapple juice, vinegar, soy sauce, corn starch and parsley. Pour over porck chops.
3. Add bell pepper. Cook on high for 6 hours.
4. The last 30 minutes add water chestnuts and pineapple.
5. Serve over brown rice!

Fruit Pizza, Julified

Perfect summer treat~I changed up the traditional fruit pizza. Instead of a sugar cookie crust I used whole wheat flour and a butter substitute.  It only requires the oven on for 10 minutes at 350!  Swap whatever fruit is in season or on sale! I usually use blueberries but they were $2.95 for a pint yesterday! Ouch! Hopefully in a few weeks I'll have lots of blueberries from my MIL:)















Fruit Pizza
1/2 c. Whole Wheat Flour
1/2 c. AP flour
1/4 c. Confectioners Sugar
1/2 c. Butter (I use Best Life butter substitute)
8 oz Cream Cheese Light, at room temperature
1/4 c. Sugar
1 tsp. vanilla
zest from 1 lemon
1 c. Strawberries, chopped
1 Mango, peeled, cored and chopped
1/2 can (11oz) Mandarin Oranges
1/4 c. pecans or almonds
1/4 c. coconut

1. In a large bowl combine flours and confectioner's sugar. Cut in butter.
2. Press into a ungreased pie plate.
3. Bake at 350 for 10-12minutes. Allow to cool
4. Meanwhile, in a separate bowl- beat cream cheese, sugar, lemon zest and vanilla until creamy.
5. Spread cream cheese mixture over cooled crust.
6. Top w fruit of your choice, nuts and coconut
(Makes 12 servings. 4 WW points per serving)

My Mailbox Monday

Here is samples from 2 weeks worth of mail! I love signing up for samples not only for the Free trial sample but also b/c they almost always come w/ coupons! Today, I got a coupon for FREE peanut butter on the go! I'm so excited to go get that from Target :)

"My covenant with you"

Thursday when we arrived in Valpo it was raining a little bit. When it cleared up the sky was adorned with a double rainbow. The pictures don't capture the 2nd rainbow but it was definitely there! I was reminded of this scripture, good thing too, otherwise, I might have been worried Friday morning during the 4 inches of rain we got in just a few short hours ;)

Genesis 9:11-13 "I now establish my covenant with you: Never again will all life be cut off by the water of a flood; never again will there be a flood to destroy the earth. This is the sign of the covenant I am making between me and you and every living creature with you, a covenant for all generations to come. I have set my rainbow in the clouds, and it will be the sign of the covenant between me and the earth"

Catching Up

I haven't posted in over a week!!! Last week, I was busy w my two nephews who came to stay a week w me. I had no time to blog--I was busy at the zoo, waterpark, baseball game, running through the sprinkler and making Oreo milkshakes :) It was a blast having them around, they are such well mannered young guys. So content and easy going. It was great spending one on one time w them. I couldn't brag 'em up enough to their parents. I'd have them back Any Day!
