Friday's Freezer Friendly Food- Pancakes

I almost always make a special breakfast on Saturday mornings. I love making extra pancakes to freeze for Mae to eat through out the week!

Whole Wheat Banana Pancakes
2 eggs
2 c. whole wheat flour
1 Tbsp sugar
1 1/2 c. skim milk
2 Tbsp baking powder
1/2 tsp. salt
2 tsp. cinnamon
dash of nutmeg
3 over ripe bananas, mashed

-Combine all ingredients and stir just until combined.
-Cook in a small amount of oil.
-Eat right away OR place in a single layer on a cookie sheet and place in freezer for about 2 hours or until frozen completely. Then transfer to a ziploc bag.
-Reheat for 45 seconds in microwave.

  1. DUH! Thanks Julie! I always make too many pancakes and end up throwing them away! What a waste. I'm going to be freezing them from now on for sure! :)
